How To Make Crispy Battered Chicken In Honey Sauce
Mmmm isn’t food from the local Chinese/Asian take away just amazing, I certainly think so! I’m a self confessed ‘Asian food aholic’, ordering more than one take away a week. It costs me a fortune that I don’t have. So one day I decided that I’d try to re-create any Chinese meal I ate. I began by analysing all the tastes and possible ingredients in the food I was eating and through trial and error I re-created a few recipes of my favourite dishes. Battered Chicken in a Honey Sauce (Shredded chicken) was one of my favourites I began cooking at home. It is also quite an easy chicken recipe to follow. One day I was in my favourite local Chinese with my best friend Sarah, while we were eating our favourite dish. It was Golden Syrup. I know right, Golden Syrup, why don’t they just call it Battered chicken in Golden syrup sauce? Well maybe it doesn’t sound that appetising I suppose. I shall now write out a list of ingredients you’ll need to create this delicious dish.
You may follow this chicken recipe or tweak it to your liking. Do you have a Wok? I generally roughly estimate the quantities for the batter and it turns out fine. If you want to alter my batter recipe feel free, it’s the sauce that needs to be strict. Add Plain flour and Corn Flour into mixing bowl and mix in a pinch of salt and pepper. Next add 1 egg and mix thoroughly. Now add just enough warm water to the Batter mixture to produce a thick consistency. The batter should be able to run off the end of a spoon. It you want to add more colour and a bit of taste to the batter, you can also add a little soy sauce. Chop the chicken into thin strips or into cubes. Cover the chicken in a generous amount of batter and if you like sprinkle some plain flour on top to make more crispy when fried.
Now you can either Shallow fry (in Wok) or Deep fry (in Deep fat fryer) the battered chicken. You can just use pure vegetable oil or sunflower oil for this, but if you want you could add a little peanut or sesame oil to the veg/sunflower oil to give a little extra flavour. If shallow frying, make sure to constantly move the battered chicken so it doesn’t stick to wok. When batter turns a light golden brown, remove chicken from oil and let drain on top of some tissue. Cut the Garlic clove up very finely as well as ginger (optional), lemon grass (optional) and Chili (optional - don’t use too much). Fry Garlic etc… in a little oil (peanut, veg. Now its time to add the Golden syrup and Honey. Add more Golden syrup to the mixture than Honey. Add as much as you want and constantly taste the sauce to make sure it’s to your liking. I generally like my sauce to be a runny so I don’t add too much of each, but it’s up to you!
Let the Sauce boil a little until it starts to thicken slightly. Also if you think you made too much sauce or just want it stronger and thicker, keep boiling it so it reduces a bit. Now it’s time to add the previously cooked battered chicken to the sauce in the pan/wok. Mix everything thoroughly and let sauce soak into the batter for a minute. Your dish is ready! Arrange your chicken on top of some fried or plain rice, pour over your Honey sauce and sprinkle as much sesame seeds as you like on top.
